Green velvet cookies with white chocolate chips are a fun cookie to serve for St. Patrick's Day or during the spring season. These cookies are not made with cake mix and they are made from scratch.

- unsalted butter, melted and cooled
- light brown sugar
- granulated sugar
- egg yolk
- white vinegar
- vanilla extract
- green food coloring
- unsweetened cocoa powder
- all-purpose flour
- baking soda

How to Make Green Velvet Cookies
Preheat the oven and prepare the cookie sheets - Preheat the oven to 350°F and line a cookie sheet with parchment paper. Set aside.
Melt the butter - Melt the unsalted butter either on the stovetop or in the microwave.
Combine the wet ingredients - In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar.
Beat in the egg and egg yolk, vanilla extract, and green food coloring and mix until combined and smooth.
Combine the dry ingredients - In a separate bowl sift together the flour, cocoa powder, baking soda, and salt to combine.
Make the green velvet cookie dough - Slowly add the dry ingredients to the wet and mix together until combined. Be careful not to overmix. Stir in the white chocolate chips.
Scoop the cookie dough - Use a #40 cookie scoop (or by 1 tablespoon) to scoop cookies out. Roll into a ball and place on the prepared cookie sheet two inches apart. Press additional white chocolate chips into the tops of the cookie dough balls.
Bake - Bake the cookies for 9 to 10 minutes or until the tops are cracked and the cookies are set. Be careful not to overbake.
