Green velvet cookies with white chocolate chips are a fun cookie to serve for St. Patrick's Day or during the spring season. These cookies are not made with cake mix - they are made from scratch!

Preheat the oven to 350°F and line a cookie sheet with parchment paper. Set aside.
Melt the unsalted butter either on the stovetop or in the microwave.
In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar.
Beat in the egg and egg yolk, vanilla extract, vinegar, and green food coloring and mix until combined and smooth.
In a separate bowl sift together the flour, cocoa powder, baking soda, and salt to combine.
Slowly add the dry ingredients to the wet and mix together until combined. Be careful not to overmix.
Stir in the white chocolate chips.
Use a #40 cookie scoop (or by 1 tablespoon) to scoop cookies out. Roll into a ball and place on the prepared cookie sheet two inches apart.
Press additional white chocolate chips into the tops of the cookie dough balls.
Bake the cookies for 9 to 10 minutes or until the tops are cracked and the cookies are set. Be careful not to overbake.
Notes
Color Tip: The final color depends on the type of food coloring used. Because the dough contains cocoa powder, liquid food coloring is usually not strong enough and can result in a brown or muted color. For a true green, use a concentrated gel food coloring and adjust the amount as needed.
