Creamy Mashed Potatoes

This recipe for Irish Champ is made using salted butter and milk. I prefer to make my potatoes in the Instant Pot but they can easily be made on the stovetop as well.

To make these potatoes in the Instant Pot, you will need just 1 cup of water in the liner.

After peeling the russet potatoes, quarter them and add them to the pot. Close the lid and set the Instant Pot to 5 minutes. Once the five minutes are up, perform a quick release (carefully and away from face).

Either method you make these potatoes (stovetop or pressure cooker), drain the potatoes using a colander and use a potato masher to mash the potatoes. Add in the butter, allow it to melt, and blend into the potatoes with the milk, salt, and pepper.

Avoid mixing the mashed potatoes too much, it will cause the potatoes to have a gluey texture.

Mix in the scallions and serve with melted butter as desired.

Quick and Easy Side Dish

With only 6 ingredients, this mashed potato side dish comes together quickly and into a buttery delicious dish.

It's great to serve in celebration of St. Patrick's Day or as an everyday side dish. Butter is important in this dish so it's important not to go lighthanded with it to get the full flavor. It is also best to use salted butter versus unsalted butter to increase the flavor as well.

Love scallions with potatoes! I haven't tried cooking potatoes in my pressure cooker yet. I'm guessing they turn out perfectly creamy.
