Creamy Mashed Potatoes
This recipe for Irish Champ is made using salted butter and milk. I prefer to make my potatoes in the Instant Pot but they can easily be made on the stovetop as well.
To make these potatoes in the Instant Pot, you will need just 1 cup of water in the liner.
After peeling the russet potatoes, quarter them and add them to the pot. Close the lid and set the Instant Pot to 5 minutes. Once the five minutes are up, perform a quick release (carefully and away from face).
Either method you make these potatoes (stovetop or pressure cooker), drain the potatoes using a colander and use a potato masher to mash the potatoes. Add in the butter, allow it to melt, and blend into the potatoes with the milk, salt, and pepper.
Avoid mixing the mashed potatoes too much, it will cause the potatoes to have a gluey texture.
Mix in the scallions and serve with melted butter as desired.

Irish Champ (Irish Mashed Potatoes)
Irish Champ is a version of a mashed potato side dish that is made with lots of butter and mixed with scallions. Stovetop and Instant Pot versions included.
Ingredients
- 1.5 lbs Russet Potatoes, 4-5 potatoes
- 1 cup scallions
- 6 tablespoon salted butter
- 6 tablespoon milk
- black pepper, to taste
- salt, to taste
Instructions
- Wash, peel and quarter potatoes.
Instant Pot
- Add 1 cup of water to the Instant Pot and add the peeled and quartered potatoes.
- Close the lid and set the Instant Pot to MANUAL/PRESSURE COOK for 5 minutes.
- Perform a quick release (careful!) and drain the liquid from the pot.
- Mash the potatoes and add the butter and allow it to melt.
- Mix in the milk, scallions, and desired amount of salt and pepper.
- Serve with additonal melted butter if desired.
Stovetop
- Add the peeled and quartered potatoes to a large pot and cover the potatoes with water. Sprinkle with salt.
- Allow the water to begin to boil.
- Cover and cook for 15-20 minutes. Cook until the potatoes are fork tender.
- Drain the potatoes and mash the potatoes and add the butter. Allow it to melt.
- Mix in the milk, scallions, and desired amount of salt and pepper.
- Serve with additional melted butter if desired.

Love scallions with potatoes! I haven't tried cooking potatoes in my pressure cooker yet. I'm guessing they turn out perfectly creamy.
