One of my favorite ways to use Karo® Corn Syrup is to add it to my cookie dough.  It makes cookies chewy on the outside and creates that soft center that is often desired in a cookie.  Ultimately, it makes delicious cookies that you can't wait to sink your teeth into!

Making Chewy Chocolate Chip Chunk Cookies

Making these cookies is incredibly easy, and they don’t take a lot of ingredients! This recipe uses very common ingredients such as unsalted butter, eggs, brown sugar, baking soda, baking powder, all-purpose flour, and salt.

The most important and common ingredient is the addition of Karo® Corn Syrup. It’s what makes these cookies super chewy!

I use a mixture of semi-sweet chocolate chips and milk chocolate chunks to give different flavors and textures of chocolate.

The chocolate gives give a semi-sweet flavor and the chocolate chunks give a crunch into every bite. The end result is a tender, chewy, and chocolatey cookie.

Chilling the Dough

Chilling your cookie dough before baking these cookies ensures that the cookies don't spread too much and become very flat. Chilling them in the refrigerator allows them to keep their shape during baking.

Once you're ready to bake the cookies, take the dough out of the refrigerator. roll it into 1 inch balls, and place them onto a lightly greased cookie sheet or on silicone mats on top of your cookie sheets.

Place the unused dough back into the refrigerator to keep the dough chilled and ready for the next batch of cookies!

After the cookies are done baking, allow the cookies to cool on the cookie sheet for about 5 minutes before moving them to a wire rack to cool completely. Top with additional chocolate chips and chunks if desired!

Chewy Chocolate Chip Chunk Cookies

Chewy Chocolate Chip Chunk Cookies

Chilling Time 20 minutes
Total Time 38 minutes

Ingredients

  • 1 cup unsalted butter, softened
  • 1 ½ cup brown sugar, packed
  • ¾ cup Karo® Corn Syrup
  • 2 eggs
  • 2 teaspoon vanilla extract
  • 3 ¼ cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 ½ cup semi-sweet chocolate chips
  • ½ cup milk chocolate chunks

Instructions

  1. Preheat the oven to 350°
  2. Lightly grease cookie sheets or line cookie sheets with silicone mats.
  3. In a bowl, sift together the flour, baking soda, baking powder, and salt. Set aside.
  4. In a large bowl, beat together the softened butter, and brown sugar together.
  5. Add in the Karo® Corn Syrup and beat well.
  6. Beat in the eggs and the vanilla extract.
  7. Slowly add the flour mixture to the wet ingredients, blending well.
  8. Stir in the chocolate chips and chocolate chunks.
  9. Chill the cookie dough for 15-20 minutes.
  10. Once the cookie dough is chilled, roll into 1 inch balls and place cookies 2 inches apart.
  11. Return unused cookie dough to the refrigerator to keep cold until ready to bake.
  12. Bake for about 10 minutes. The edges will be golden but the center will be a bit gooey.
  13. After the cookies have cooled for at least 5 minutes, move to a wire rack for cookies to cool completely.

I made these today. These are the best tasting cookies ever. Be sure to use parchment paper or spray your pan with Pam. I added a cup of shredded coconut just because I had some left over from another recipe. These are soooo good. I will for sure be using this recipe again and again. Thanks for sharing.
