How to Make Chocolate Chip Zucchini Bread

- Grate the zucchini on the fine side of a box grater until you have 2 cups. Do not squeeze out the water. Set aside.
- In a large bowl, whisk together the flour, cinnamon, ginger, baking soda, and salt.
- In a medium bowl, whisk together the vegetable oil, sugar, eggs, and vanilla until smooth. Stir in the grated zucchini.
- Add the wet mixture to the dry ingredients. Stir until just combined. Do not overmix.
- Fold in 1 ¾ cups of the chocolate chips. Reserve the remaining ¼ cup.
- Spoon the batter into the prepared loaf pan. Scatter the reserved chocolate chips across the top.
- Bake for 60 to 65 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top is browning too quickly, loosely tent with foil during the last 15 minutes.
- Cool in the pan for 10 minutes. Lift the loaf out by the parchment and transfer to a wire rack. Cool completely before slicing.
