How to Make Apple Fritter Cake

  1. Preheat the oven to 350°F. 
  2. Grease and flour two 9x5 loaf pans or line with parchment paper.
  3. In a large bowl, combine the wet ingredients: butter, sugar, eggs, and vanilla.
  4. Combine the dry ingredients in a medium bowl: flour, baking powder, and salt.
  5. Slowly mix the dry ingredients into the bowl of wet ingredients, alternating with the milk. 
  6. Peel and dice the apples.
  7. Combine the softened butter, brown sugar, cinnamon, and flour in a medium bowl and stir in the apples.
  8. Pour the cake batter evenly between each prepared pan.
  9. Spread the apple mixture over the batter and use a knife to gently swirl it into the cake.
  10. Bake for 50-60 minutes. Check the center with a toothpick around the 50-minute mark.
  11. Let the cake cool for at least 20 minutes.
  12. Carefully remove the loaves from the pan and cool completely on a wire rack. While the cake cools, mix together the glaze ingredients.
  13. Drizzle the sweet glaze over the cooled cake, and allow the glaze to harden before slicing.

How to Choose the Right Apples for Baking

When it comes to baking a delicious baked treat with apples, the type of apple you choose can alter the sweet or tangy flavor of the overall cake.

The ideal apples are fresh apples that are firm enough to hold their shape and not break down during baking. You want a nice balance of sweetness and tartness for the best flavors possible for your cake. 

One popular apple choice for baking is the Granny Smith apple, which I use in most of my apple-based baking recipes. Its firm texture and tart flavor make it the perfect option for baking, and it's very easy to find in grocery stores.

Another great choice for baking is Honeycrisp apples. They hold up well during baking and have a good balance of sweetness and tartness, just like Granny Smith apples. 

Other apple varieties that work well in apple cakes include Jonagold, Fuji, Gala, and Cortland apples. Their flavor profiles differ from those of the Honeycrisp and Granny Smith apples, but they work well in baking.

Tart apples such as Granny Smith are best for this cake. Honeycrisp apples are also a good choice but are sweeter.
