This blueberry crumb cake is a variation of my Sour Cream Coffee Cake. It has few alterations and it tastes great with the addition of the blueberries. It makes for a tasty breakfast or for a yummy dessert.
I made this crumb cake in a 9x13 baking dish. I lined the dish with parchment paper because it makes for super easy cleanup!
This cake has a layer of blueberries between two layers of the cake mix. It has a streusel topping of cinnamon and nutmeg spices and is finished off with sprinkled blueberries.

- Unsalted butter, unsalted, softened
- Granulated sugar
- Brown sugar
- Eggs
- Salt
- Baking powder
- Vanilla extract
- Sour cream
- Milk
- All-purpose flour
- Blueberries
- Lemon zest
- Nutmeg
- Powdered sugar
Making a Moist Cake
The key to making a moist cake is in the technique of making it. It's important to not overbeat the mix for the cake and it's important to not overbake it in the oven!
Checking the cake with a toothpick in the center of the cake is the best way to tell if it is done.
If it comes out clean, take the cake out of the oven and let it cool on trivets. Allow the cake to cool completely before adding the drizzle topping.
How to Make Blueberry Crumb Cake
Preheat the oven and prepare the pan- Preheat the oven to 350°F and prepare the baking pan by lightly greasing the sides and bottom of either an 11x15 pan or a 9x13 pan. Use parchment paper if you would like.
Mix the wet ingredients- In a large bowl, cream together butter, brown sugar, and sugar. Add in room temp eggs one at a time.
Add the other ingredients- Mix in salt, baking powder, vanilla extract, nutmeg, and sour cream. Stir in milk and add flour gradually.
Stir in the blueberries- Fold in the blueberries. Once mixed, set the cake batter aside.
Pour into the pan- Pour the cake batter into the prepared pan and add the crumble topping in an even layer on top of the cake batter. Top with additional blueberries if desired.
Bake- Bake for 40-45 minutes in an 11x15 pan or for 50-55 minutes in a 9x13 pan.
Cool and add drizzle- Allow the cake to cool completely before drizzling with glaze.
How to Make Crumble Topping
Melt the butter- Melt the butter and set it aside to allow it cool.
Mix the other ingredients- In a small bowl, mix together brown sugar, salt, cinnamon, and flour.
Add the butter- Mix well and add in melted butter. Mix well and cut into the mixture with a fork to make it crumbly. Set aside.

Drizzle Topping
- 4 tablespoons milk
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
Instructions
Blueberry Crumb Cake
1.Preheat oven to 350°
2.Prepare baking pan by lightly greasing sides and bottom. Use parchment paper if you would like.
3.In a large bowl, cream together butter, brown sugar, and sugar.
4.Add in room temp eggs one at a time.
5.Mix in salt, baking powder, vanilla extract, nutmeg, and sour cream.
6.Stir in milk and add flour gradually.
7.Fold in the blueberries.
8.After mixed, set aside.
Crumble Topping
1.Melt 6 tablespoon of butter.
2.In a small bowl, mix together brown sugar, salt, cinnamon, and flour.
3.Mix well and add in melted butter. Mix well. Set aside.
Assembling the Blueberry Crumb Cake
1.Pour the cake batter into the cake pan.
2.Take the prepared crumble topping and sprinkle it over the coffee cake batter. Make sure to spread it evenly across the top.
3.If desired, top with additional blueberries
4.Bake for about 40-45 minutes for an 11x15 pan and about 50-55 minutes for a 9x13 pan.
5.Check the center of the cake with a toothpick to check for doneness.
6.Remove cake from oven and let cool completely.
7.Make sure the cake is cool completely before adding the drizzle topping. If the cake is warm then the drizzle with melt into the cake.
