Savory Pulled Pork Crockpot Recipe
My family enjoys this recipe. It is very flavorful, tender, and moist. There is plenty left for seconds or leftovers for the next day.
Ingredients for the Crockpot:
4 medium garlic cloves, thinly chopped
2 medium onions, thinly sliced
1 cup low-sodium chicken broth
Ingredients for the rub:
1 5-pound boneless or bone-in pork shoulder
1 tablespoon packed brown sugar
1 tablespoon chili powder
1 tablespoon salt (or to taste)
½ teaspoon ground cumin
¼ teaspoon ground cinnamon
2 cups barbecue sauce (we like Sweet Baby Rays)
Directions:
Prepare the crockpot:
Spread sliced onions and chopped garlic cloves on the bottom of the crockpot.
Add the 1 cup of chicken broth.
Prepare the pork shoulder:
In a small bowl mix together the brown sugar, chili powder, salt, cumin, and cinnamon.
Pat to dry the pork shoulder then rub the spice mix all over the pork shoulder, using it all.
Place pork shoulder in the crockpot on top of onions and garlic.
Cover and cook for 8-10 hours on low or 6-8 hours on high
Making the pulled pork:
After the time is up, transfer meat to cutting board, removing bone (if it has one)
Using mesh strainer, separate liquids from garlic and onions, placing the vegetables back to the crockpot.
Shred the pork shoulder using 2 forks into small pieces and discarding fat.
Place shredded meat back in crockpot, stirring onions and garlic and adding the 2 cups of barbeque sauce.
