This Bisquick Zucchini Quiche combines baking mix with freshly grated zucchini, diced onions, herbs, and cheese. This easy dish is perfect for breakfast, brunch, or dinner.

This zucchini quiche recipe is great during the summer months while zucchini is in abundance.

Ingredients

  • Fresh zucchini: Make sure you have at least 3 ½ cups of grated zucchini. You can also use shredded zucchini easily by using a food processor, but a box grater works nicely to grate the zucchini.
  • Bisquick mix: This prepackaged mix brings ease to your recipe, providing a base for the quiche. Simply measure the baking mix and add it to the recipe. You can also use other brands of baking mix or your own homemade version.

Instructions

To make this delicious Bisquick Zucchini Quiche, follow these simple steps.

Preheat the oven: Preheat the oven to 400°F and lightly grease a nine-inch pie dish with oil or cooking spray.

Grate and Drain zucchini: Wash and grate one large zucchini or enough zucchini to have 3 ½ cups of grated zucchini.

Gently squeeze out the excess moisture from the grated zucchini and place it in a large mixing bowl.

Make the batter: Add the premeasured Bisquick baking mix to the zucchini as well the eggs and oil.

Prepare the onion and add the other ingredients: Chop the small onion into small pieces and add it to the batter.

Measure the herbs and seasonings: Measure the oregano, salt, pepper, and basil and add it to the zucchini quiche batter.

Add cheese: Mix in the cheddar cheese and the grated Parmesan cheese into the batter.

Pour mixture: Transfer the quiche mixture into the prepared greased pie dish and spread it evenly into the pie plate.

Bake: Bake the Bisquick Zucchini Quiche in the preheated oven for 25 minutes.

Hint: using a box grater makes grating the zucchini very easy. Make sure to squeeze the grated (or shredded) zucchini to prevent the quiche from being too wet after it is baked.

Substitutions

When making Bisquick Zucchini Quiche, you can substitute some ingredients to suit your preferences such as making it gluten-free with gluten free baking mix.

This recipe uses basil and oregano, but you have the option to explore different herbs and spices. You can also substitute the basil and oregano with an Italian seasoning mix. It will alter the flavor of the finished dish so change the seasonings based on preference.

You can swap out the zucchini for yellow squash. It will change the overall flavor of the dish but yellow squash can easily be swapped out.

Keep in mind that making substitutions may result in some changes to the final outcome, and using gluten free baking mix may alter the overall texture of the quiche.

When it comes to cheese, the recipe calls for cheddar cheese and Parmesan, but you can always swap it out for other types of cheese, such as mozzarella.

  • Add Vegetables - add tomatoes, peppers, and other veggies to the quiche, Just chop them small and add them to the batter just as the onion is added,
  • Change the cheese amount - Make it as cheesy as you want it by reducing or adding to the amount of cheese in the dish.

Equipment

A deep dish pie plate is important to have for this recipe - it should be deep enough to hold all of your ingredients. Glass or ceramic pie plates are typically the best choice, as the quiche will brown and cook more evenly than using a metal pan.

A box grater will come in handy when preparing your zucchini for the quiche. While you can grate zucchini using a box grater, a food processor will make this step quick and efficient if you desire to have shredded zucchini instead. The food processor will come in handy when chopping the onion for this recipe as well.

Lastly, nonstick spray or oil is crucial when it comes to preparing your pie plate for baking. This will prevent the quiche from sticking to the bottom of the pan and will help create clean-cut slices and prevent stuck food on the dish.

Storage

In the refrigerator, the quiche will keep fresh for about 3 to 4 days.

To freeze the quiche, wrap it tightly in plastic wrap. Then, place it in a freezer-safe container or a resealable plastic bag. When frozen properly, the quiche will last up to 3 months in the freezer.

When ready to serve, remove the quiche from the freezer and let it thaw in the refrigerator before baking it at 350ºF for about 25 minutes, or until it is heated through.

Ingredients

  • 3 ½ cups zucchini, grated
  • 1 small onion, diced
  • 1 ½ cup Bisquick baking mix
  • ½ cup oil
  • 3 eggs, beaten
  • 1 teaspoon oregano
  • ½ teaspoon basil
  • ½ teaspoon pepper
  • ½ teaspoon salt
  • 1 ½ cup shredded cheddar cheese
  • ¼ cup grated Parmesan

Instructions

  1. Preheat the oven to 400ºF and spray a pie dish with nonstick cooking spray.
  2. Wash and grate the zucchini. No need to peel the zucchini.
  3. Squeeze out the excess moisture from the grated zucchini.
  4. Place the grated zucchini in a large bowl and mix the oil into it until combined.
  5. Add the beaten eggs and the baking mix.
  6. Stir in the oregano, basil, salt, and pepper.
  7. Mix in the diced onion, shredded cheddar cheese, and Parmesan cheese.
  8. Pour the batter into the prepared pie dish and spread evenly.
  9. Bake for 25 minutes or until the crust is golden brown.
  10. Allow the quiche to cool completely before covering and storing.

Notes

You can use shredded zucchini instead of grated zucchini if desired.
