Ingredients

Instructions
Preheat the oven to 400ºF and spray a pie dish with nonstick cooking spray.
Wash and grate the zucchini. No need to peel the zucchini.
Squeeze out the excess moisture from the grated zucchini.
Place the grated zucchini in a large bowl and mix the oil into it until combined.
Add the beaten eggs and the baking mix.
Stir in the oregano, basil, salt, and pepper.
Mix in the diced onion, shredded cheddar cheese, and Parmesan cheese.
Pour the batter into the prepared pie dish and spread evenly.
Bake for 25 minutes or until the crust is golden brown.
Allow the quiche to cool completely before covering and storing.
Notes
You can use shredded zucchini instead of grated zucchini if desired.
Variations:
Add Vegetables
- add tomatoes, peppers, and other veggies to the quiche, Just chop them small and add them to the batter just as the onion is added,
Change the cheese amount
- Make it as cheesy as you want it by reducing or adding to the amount of cheese in the dish.
