Easy Italian pasta salad is veggie spiral pasta tossed with pepperoni, cheddar, sweet peppers, red onion, and Italian dressing. It takes 20 minutes and it is the first thing gone at a potluck. I make a double batch because one bowl is never enough.
The veggie spirals give it color without any extra work. They are basically a tricolor rotini, and the twists hold the dressing in every bite. The Italian dressing soaks in overnight and tastes even better the next day. This is my go-to when I need a side dish that looks like effort but is not.
What is Italian pasta salad? Italian pasta salad is a cold pasta dish made with veggie spiral pasta, pepperoni, cheddar cheese, sweet peppers, red onion, and Italian dressing. Ready in 20 minutes and even better the next day.

Why This Italian Pasta Salad Works
The pasta shape matters. Veggie spirals have twists and grooves that catch the dressing. Smooth pasta lets it slide off. These spirals trap it in every bite so the flavor does not pool at the bottom of the bowl.
Olive oil goes on the pasta first, right after draining. It keeps the spirals from sticking together and gives the dressing something to cling to. Skip this step and the pasta clumps.
The chill time is not optional. Two hours minimum, overnight if you have it. The dressing soaks into the pasta and the veggies soften just a little. The pepperoni and cheese release salt into the mix. The whole thing tastes deeper and more balanced than it does fresh out of the bowl.
Mix It Up
Pepperoni is my favorite but salami or diced ham work just as well. The sweet mini peppers and red onion give each bite a little crunch and sweetness. Swap in bell peppers if that is what you have. The cheddar adds a smooth bite and another hit of color, but any cheese you like works here. Mozzarella pearls or provolone are good too.

Make Ahead for a Crowd
Let this pasta salad chill for at least 2 hours before serving. Overnight is better. The dressing soaks into the pasta and the veggies and everything tastes like more than the sum of its parts.
This recipe doubles or triples cleanly for a crowd. Cook the pasta, dice the add-ins, toss it together, and you are done. It is the recipe I grab when I have no time and need to bring something that looks like I did.
Leftovers keep in the fridge for up to 4 days. The pasta will soak up the dressing over time so give it a fresh drizzle of Italian dressing before serving the leftovers.

Easy Italian Pasta Salad
Ingredients
- 1 package Veggie Spiral Pasta - 12 oz. box tricolor pasta
- 1 ½ cups Italian salad dressing
- ¼ cup cheddar cheese - diced
- ½ cup pepperoni - diced
- ½ red onion - diced
- ¼ cup sweet mini peppers - red, orange, and yellow, diced
- ¼ cup olive oil
Instructions
- Boil pasta according to package.
- Drain pasta and add ¼ cup of olive oil to prevent pasta from sticking together and drying out.
- After it cools, add peppers, cheese, pepperoni, and onion.
- Mix in Italian salad dressing.
- Refrigerate for at least 2 hours before serving.
