How to Make Green Velvet Cookies

Preheat the oven and prepare the cookie sheets - Preheat the oven to 350°F and line a cookie sheet with parchment paper. Set aside.

Melt the butter - Melt the unsalted butter either on the stovetop or in the microwave.

Combine the wet ingredients - In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar.

Beat in the egg and egg yolk, vanilla extract, and green food coloring and mix until combined and smooth.

Combine the dry ingredients - In a separate bowl sift together the flour, cocoa powder, baking soda, and salt to combine.

Make the green velvet cookie dough - Slowly add the dry ingredients to the wet and mix together until combined. Be careful not to overmix. Stir in the white chocolate chips.

Scoop the cookie dough - Use a #40 cookie scoop (or by 1 tablespoon) to scoop cookies out. Roll into a ball and place on the prepared cookie sheet two inches apart. Press additional white chocolate chips into the tops of the cookie dough balls.

Bake - Bake the cookies for 9 to 10 minutes or until the tops are cracked and the cookies are set. Be careful not to overbake.

Tips for Making Cookies

Whether you're a beginner baker or a seasoned baker, it's a good idea to utilize these tips and tools while cookie baking.

Watch the oven - No oven heats exactly the same so using an oven thermometer will keep the correct temperature while cookie baking. Adjust the bake time as well according to how your oven bakes to prevent overbaking or underbaking.

Use parchment paper - Not only does parchment paper make cleaning up the cookie sheet a breeze but it also helps prevent the cookies from spreading as much as they would while baking directly on the cookie sheet.

Know your cookie sheet - Dark cookie sheets tend to bake faster and absorb more heat than light cookie sheets. If using a dark cookie sheet, reduce the oven temperature by 25 degrees as the bottom and edges of the cookies will darken faster.

Bake one cookie sheet at a time - For even baking cookies and consistent cookie results, bake one cookie sheet at a time and cool the cookie sheets between batches.

Use a cookie scoop - A cookie scoop is a great tool for getting the same size cookies, every time. There are a variety of cookie scoop sizes available for all of your cookie-baking needs.

Use cooling racks - Cookies continue to bake after they come out of the oven and after five to ten minutes of resting time on the cookie sheets it's time to transfer the cookies to a cooling rack so they can cool properly. Using a layered cooling rack also frees up counter space while baking large batches of cookies.

I made these cookies. While delicious, they did not come out green. They're brown.
