How to Make Coffee Cookies

Follow these easy instructions for making delicious coffee chocolate chip cookies.

  1. Preheat the oven to 350°F.
  2. In a large bowl, beat the softened butter and mix in the white sugar and brown sugar.
  3. Beat the egg and the vanilla extract into the mixture.
  4. Microwave the 2 tbsps of water in a microwave-safe bowl for 40 seconds.
  5. Stir the instant coffee granules into the hot water until dissolved.
  6. In a small bowl, combine the dry ingredients: all-purpose flour, salt, and baking soda.
  7. Slowly mix the flour mixture into the wet ingredients.
  8. Alternate with the coffee mixture.
  9. Stir in the white and semi-sweet chocolate chips.
  10. Scoop the cookies using a #30 cookie scoop or buy rolling into 1-inch cookie dough balls.
  11. Cover and chill in the refrigerator for 30 minutes.
  12. Bake on parchment paper lined cookie sheets for about 10-11 minutes. The edges should be golden brown. (Bake one cookie sheet at a time)
  13. Allow the cookies to cool for 10 minutes before moving them to a wire rack to cool completely.
