What's Needed to Make Chocolate Peanut Butter Ritz Cookies

Minimal ingredients are needed to make this incredibly easy recipe. 

  • 48 ritz crackers
  • ¾ cup creamy peanut butter, your favorite kind
  • 1 cup chocolate chips
  • 12 ounces Chocolate Almond Bark or chocolate candy melts
  • holiday sprinkles for decorating

How to Make Chocolate Covered Ritz Cracker Cookies

  1. Line a large cookie sheet with parchment or wax paper.
  2. Place 24 Ritz crackers on the baking sheet.
  3. Spoon about ½ tablespoon of peanut butter onto each cracker.
  4. Gently press another cracker on top of the peanut butter to create a sandwich.
  5. If you are melting chocolate in the microwave, place almond bark or chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring each time, until the chocolate is melted and smooth. (Alternatively, you can use a double boiler.)
  6. Dip one sandwich cookie into the melted chocolate, pressing it gently to ensure it's coated.
  7. Use a fork to lift the sandwich from the chocolate, gently tapping the fork to remove any excess chocolate.
  8. Place the coated sandwich cookie back on the parchment paper.
  9. If desired, top with sprinkles before the chocolate hardens.
  10. Repeat the process with the remaining sandwiches.
  11. Allow the cookies to sit at room temperature until the chocolate sets. For quicker setting, refrigerate them for about 15 minutes.

Store in an airtight container for up to 1 week or freeze them for up 2 months.

Tips for Making Ritz Cracker Cookies

Use a double boiler for better control over the temperature of the chocolate.

Use two forks: One to press the cookie into the chocolate and to cover and one to lift out and shake off excess chocolate. 

Add a tablespoon of coconut oil to thin the chocolate and to create a glossy finish.
