Turkey Pot Pie
This easy turkey pot pie can be made using leftover turkey breast. This pot pie is quick and easy and uses a gravy mix and packaged biscuit mixes.

Ingredients

package Turkey Gravy Mix

package Country Biscuit Mix

Instructions
Preheat the oven to 400°F
Heat a skillet over medium-high heat and add butter.
Add the chopped carrots, celery, potatoes, and onions to the skillet.
Cook until the onions are translucent, about 3-5 minutes.
Sprinkle in the garlic powder, salt, parsley, thyme, pepper, and rosemary.
Stir in the chopped turkey.
Prepare the gravy according to the package directions.
Pour 2 - 2 ½ cups of gravy into the pot pie filling.
Stir to combine well.
Reduce heat to a simmer and stir occasionally for about 5 minutes.
Meanwhile, prepare the biscuit dough according to the directions on the back of the package.
Pat the dough out a little thinner than the package reads in order to cut 8 biscuits out.
If using a cast-iron skillet stir the mixture one more time and then add the cut biscuits on top.
If using a pie plate, pour the mixture from the skillet into a pie plate and top with the biscuits.
If desired, brush a beaten egg on top of the biscuits before baking.
Bake for 10-13 minutes or until the tops of the biscuits are browned.
Remove from the oven and allow the turkey pot pie to cool slightly before serving.
