Thick and chewy monster cookies with peanut butter, old-fashioned oats, chocolate chips, and M&M's. No flour. Naturally gluten-free. Easy to customize for any holiday.
Preheat oven to 350°F and line cookie sheets with parchment paper.
Combine softened butter, peanut butter, granulated sugar, brown sugar, vanilla, and eggs in a mixing bowl and beat until creamy.
Slowly add the oatmeal and baking soda to the wet mixture and beat until combined.
Stir in the chocolate chips and M&M's, until evenly distributed in the cookie dough.
Scoop cookies by 1 and a half tablespoons or use a #40 cookie scoop to portion the cookie dough and place them onto the prepared cookie sheets two inches apart.
Bake for 11 to 13 minutes, let them cool for 5 minutes before transferring them to a cooling rack to cool completely.
Store in an airtight container.
Notes
Use old-fashioned oats for the chewiest texture. Quick oats make a softer cookie.
Dark brown sugar gives a richer flavor than light brown.
Do not overbake. Pull the cookies when the centers still look soft. They set as they cool.
Cool completely before storing so the chocolate sets.
Freeze for up to 3 months in a freezer-safe bag. Ship in a tin with wax paper between layers.
