Preheat oven to 350°F and line the cookie sheets with parchment paper.
Mix the softened unsalted butter and the brown sugar with a stand or hand mixer until smooth and creamy. Add in vanilla and egg and mix well.
Mix in maple sugar and mix thoroughly.
Combine the salt, baking soda, and all-purpose flour.
Mix the dry ingredients into the wet maple mixture until a soft cookie dough forms.
Scoop the cookie dough using a #40 cookie scoop (2 tablespoons) and then roll the cookie dough in the granulated sugar. Place two inches apart on prepared cookie sheets.
Bake for 7-9 minutes. Let the cookies cool completely before glazing.
For Maple Glaze
Mix together the confectioners sugar, milk, and maple syrup and until smooth and creamy.
Dip or drizzle glaze on completely cool cookies.
Notes
These cookies can be frozen for up to 3 months. Make sure the glaze ha hardened completely before stacking. Place parchment paper between the cookies with layering to keep the glaze from sticking to other cookies.
