GREEN VELVET COOKIES

– unsalted butter – light brown sugar – granulated sugar – egg – egg yolk – white vinegar – vanilla extract – green food coloring – unsweetened cocoa powder – all-purpose flour – baking soda – salt – white chocolate chips

INGREDIENTS

Preheat the oven

Preheat the oven to 350°F and line a cookie sheet with parchment paper. Set aside.

Combine the wet ingredients

Melt the unsalted butter either on the stovetop or in the microwave. In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Beat in the egg and egg yolk, vanilla extract, and green food coloring and mix until combined and smooth.

Combine the dry ingredients

In a separate bowl sift together the flour, cocoa powder, baking soda, and salt to combine.

Make the cookie dough

Slowly add the dry ingredients to the wet and mix together until combined. Be careful not to overmix. Stir in the white chocolate chips.

Scoop the cookies

Use a #40 cookie scoop (or by 1 tablespoon) to scoop cookies out. Roll into a ball and place on the prepared cookie sheet two inches apart. Press additional white chocolate chips into the tops of the cookie dough balls.

Bake

Bake the cookies for 9 to 10 minutes or until the tops are cracked and the cookies are set. Be careful not to overbake.
