Add the trimmed green beans and cubed potatoes to the slow cooker.
Cook the chopped bacon in a large skillet over medium heat until crispy. Use a slotted spoon to transfer the bacon to the slow cooker. Reserve some bacon pieces for topping if desired. Keep the bacon grease in the skillet.
Saute the diced onion in the bacon grease for 3 to 4 minutes until softened and translucent. Stir in the minced garlic and cook until fragrant, about 30 seconds. Use a slotted spoon to transfer the onion and garlic to the slow cooker. Discard the remaining bacon grease.
Add the chicken broth, salt, black pepper, and cayenne pepper to the slow cooker. Stir to combine.
Cover and cook on low for 5 to 7 hours or on high for 3 to 4 hours, until the green beans and potatoes reach desired tenderness.
Taste and adjust salt and pepper as needed. Serve hot with reserved crispy bacon on top.
Notes
Cook the bacon first and use the grease for the onions and garlic.
Fresh green beans hold up better than canned or frozen.
Cut potatoes into even cubes for even cooking.
Low is better than high for flavor. Five to seven hours on low.
Reserve some crispy bacon for topping.
Store in the fridge up to 4 days. Freezes up to 2 months.
