Instructions
Preheat the oven to 350°F. Line two large baking sheets with parchment paper and set aside.
In a large mixing bowl, combine together the all-purpose flour, baking soda, and salt. Set aside.
Using a hand mixer or stand mixer, cream the butter, brown sugar, and granulated sugar together until smooth and pale in color.
Beat in the peanut butter, egg, and vanilla extract until creamy and smooth.
Slowly mix in the dry ingredients and mix until just incorporated.
Gently stir in 1 cup of Reese's Pieces.
Using a #40 (1.6 tablespoons) cookie scoop or rolling dough by scooping 1.5 tablespoons, roll the cookie dough around in a ball.
Roll the ball around on the plate of granulated sugar.
Place each ball of cookie dough onto parchment paper-lined cookie sheets 2 inches apart.
To create the classic peanut butter cookie imprint - Carefully use the tines of a fork to press down on the cookie making an X with the tines.
Bake for 10 to 12 minutes or until the tops of the cookies are slightly golden brown.
Add additional Reese's Pieces on top of the cookies and gently press them into the tops of the cookies.
Allow the cookies to cool for about 10 minutes before transferring them to a wire rack to cool completely.
