Whoopie Pie Filling

cream cheese
softened

Instructions
Make the Red Velvet Cookies
Preheat the oven to 350°F and line a baking sheet with parchment paper. Set aside.
Melt the unsalted butter either on the stovetop or in the microwave.
In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar.
Beat in the egg and egg yolk, vanilla extract, white vinegar, and red food coloring, and mix until combined and smooth.
In a separate bowl sift together the flour, cocoa powder, baking soda, and salt to combine.
Slowly add the dry ingredients to the wet and mix together until combined. Be careful not to overmix.
Use a #40 cookie scoop (or by 1 tablespoon) to scoop cookies out. Roll into a ball and place on the prepared cookie sheet two inches apart.
Bake the cookies for 9 to 10 minutes or until the tops are cracked and the cookies are set. Be careful not to overbake.
Remove the cookies from the oven and allow them to cool completely before adding the filling and making the whoopie pies.
Make the Whoopie Pies
Using a hand mixer, beat the softened cream cheese and the butter until it is smooth.
Beat in the vanilla extract and a little powdered sugar at a time.
Add in the milk and combine until creamy.
Using a piping bag, pipe the underside of one red velvet cookie and place another cookie on top to create the whoopie pie.
Store the red velvet whoopie pies in the refrigerator.
