Preheat the oven to 350°F. Prepare cookie sheets by lining them with parchment paper.
Combine shortening, brown sugar, and granulated sugar in a large bowl.
Add eggs, one at a time.
Add in vanilla extract.
Combine the dry ingredients: baking soda, salt, and flour.
Beat the flour mixture into the wet ingredients.
Stir in the peppermint chips.
Roll into 1 tablespoon cookie dough balls or use a #60 cookie scoop to drop cookies onto the baking sheet.
Bake for about 9 minutes or until the edges of the cookies are light brown.
Remove from the oven and allow to cool for 5 minutes before moving to a wire rack.
Store in an airtight container.
Notes
To make these cookies even more festive, top with candy cane pieces before baking, or mix in white chocolate chips for more flavor. For a stronger peppermint flavor in these cookies, add ½ teaspoon of peppermint extract to the batter.
