Ingredients

pineapple juice

ginger

can pineapple tidbits
save juice for cooking
cilantro
garnish, if desired
Slurry

tablespoon
water

cornstarch
Instructions
Add bite-sized chicken to Instant Pot.
Pour pineapple juice, soy sauce, and rice vinegar around the chicken.
Add the minced garlic and ginger.
Top with chopped onions and peppers.
Close with the lid and close the vent.
Cook on MANUAL for 7 minutes.
Allow a NATURAL RELEASE for 10 minutes.
Mix the cornstarch and water together to create a slurry.
Set Instant Pot to SAUTE and add in the slurry.
Add in the slurry and allow to thicken, this will take only a couple of minutes.
Mix in the pineapple tidbits and serve.
