Coca Cola Cake

½ cup salted butter
⅓ cup vegetable oil
⅓ cup unsweetened baking cocoa
1 cup Coca Cola
½ cup buttermilk
2 eggs
1 ½ teaspoon vanilla extract
2 cups all-purpose flour
2 cups granulated sugar
1 teaspoon baking soda
1 cup mini marshmallows

Coca Cola Frosting

½ cup salted butter
⅓ cup unsweetened baking cocoa
⅓ cup Coca Cola
1 teaspoon vanilla extract
3 ¼ cups confectioners sugar

Instructions

Coca Cola Cake

Preheat the oven to 350ºF
Grease (or line with parchment paper) a 9x13 baking dish.
In a bowl, mix together the all-purpose flour, baking soda, and granulated sugar.
In a large saucepan, melt the butter, the cocoa powder, and the Coca Cola and bring to a low boil.
Once boiling, add the vegetable oil and the mini marshmallows.
Stir and allow the marshmallows to melt.
Remove from heat and mix in the flour mixture.
Beat in the eggs one at a time, and add vanilla and the buttermilk.
Pour the cake batter into the prepared 9x13 baking dish.
Bake for 30-35 minutes or until a toothpick stuck in the center of the cake comes out clean.

Coca Cola Frosting

In a saucepan, melt the butter and stir in the Coca Cola and the cocoa powder.
Heat until it comes to a low boil.
Remove from heat.
Beat in the vanilla extract and the confectioners sugar.
Immediately pour the frosting over the cake, spreading evenly.
Allow the cake to cool completely before slicing.

Notes

Greasing the pan will ensure that the cake doesn't get stuck in the baking dish. Using parchment paper will help lift the cake out of the dish.
