Betty White's version of banana bread made with simple ingredients and chopped walnuts. Optional cinnamon cream cheese spread to elevate the flavors of this classic. Optional cream cheese spread is to elevate the banana bread flavors and is not a part of the original recipe.
Sift the bread flour and stir in the baking powder, baking soda, salt, and granulated sugar.
Mash the ripe bananas by using either a fork or a hand mixer.
Create a well in the center of the flour and add the mashed bananas.
Top with the egg, milk, oil, and vanilla extract.
Chop the walnuts and add them in the center as well.
Stir together the ingredients until all of the dry ingredients are moistened. Do not overstir.
Spoon the batter into the prepared loaf pan and bake for 45-50 minutes.
Check the center of the bread with a toothpick to ensure that it comes out clean and the banana bread is done.
Allow the bread to cool in the loaf pan for 10 minutes before removing it from the loaf pan and cooling in on a rack.
Cinnamon Cream Cheese
Mix together the softened cream cheese and the ground cinnamon until blended well.
Notes
Grease and flour the loaf pan to prevent the bread from sticking. Add ½ teaspoon of ground cinnamon to the flour mixture to give it a subtle cinnamon flavor.
