Cook the bacon until crispy and place the bacon onto a paper towel-lined plate to absorb grease. Cook and crumble the beef until no longer pink and drain the grease. Set aside.
In an oven-safe skillet, spread the softened cream cheese in an even layer onto the bottom of the skillet.
Spread the crumbled ground beef evenly on top of the cream cheese followed by the Rotel. Top with half of the crumbled bacon.
Sprinkle the shredded cheese on top of the beef.
Bake in the oven for 20 to 25 minutes or until the cheese is hot and bubbly.
While the bacon cheeseburger dip is in the oven, chop the dill pickles, red onion, and romaine lettuce.
Combine the mayo, pickle relish, apple cider vinegar, sugar, salt, onion powder, paprika, and garlic powder together until combined well.
Once the Bacon dip is out of the oven, top it with the chopped lettuce, dill pickles, and red onion. Layer with the remaining bacon.
When ready to serve, drizzle the special sauce on top of the dip or serve it in condiment bowls.
