Wild Rice & Mushroom

– Wild rice blend – Olive oil – Onion – Celery – Carrots – White mushrooms – Chicken broth

INGREDIENTS

Set the Instant Pot to sauté and add the olive oil. Add the onion, celery, and carrots until firm-tender.

Press cancel on the Instant Pot and add 3 cups of chicken broth, thyme, and the mushrooms.

Pour the broth in

Rinse the wild rice blend and add to a second pot. Pour in the 1 cup of chicken broth.

Stack the pots and close the Instant Pot and set to MANUAL/PRESSURE COOK for 4 minutes.

In the meantime, create a roux in a small saucepan by melting the butter and adding the cornstarch.
