Pumpkin Sugar Cookies

Pumpkin sugar cookies are made with a homemade blend of pumpkin spice and rolled in cinnamon sugar before being baked into soft tender sugar cookies.

Ingredients

– Unsalted butter, softened – Light brown sugar, packed – Canned pure pumpkin puree – Eggs – Vanilla extract – All-purpose flour – Ground cinnamon – Ground ginger – Ground allspice – Ground nutmeg – Ground cloves – Baking soda – Baking powder – Salt

Prep Time:    10 minutes

BAKE TIME: 11 MINUTES

STEP 1

Preheat the oven to 350ºF and line two cookie sheets with parchment paper.

In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, allspice, nutmeg, and cloves.

STEP 2

Cream the butter and the brown sugar together until creamy. About 3 minutes. Beat in the 2 eggs and add in the vanilla extract and the pumpkin puree.

STEP 3

Slowly mix the flour mixture into the butter mixture and mix until all the ingredients are moistened. Scoop the cookie dough into 1-inch balls.
