Instant Pot

Blueberry

– Cream cheese – Eggs – Heavy cream – White sugar – Cornstarch – Vanilla extract – Salt – Lemon juice

INGREDIENTS

Combine blueberries, sugar, lemon juice, and the cornstarch into in small pot.  Heat on medium and stir well.

Make the blueberry compote

Turn down the heat and allow the blueberry compote to thicken and then set aside to cool.

Set compote aside

Preheat oven to 325°. Combine finely crushed graham crackers, salt, and brown sugar.

Preheat oven and make the crust

Melt the 4 tablespoon of butter and mix in the graham mixture.

Add butter and prep the pan

Press graham cracker crust into the bottom of the pan. Bake the crust in the oven for 15 minutes.

Bake the crust
